Grandma made Red Velvet Cake when I was very young. 1959?1960? I
remember my parents and their sibs laughing about an incident in which
her kitchen walls got speckled with the batter. This seems to have
predated my existence, which places the cake in Northeast Ohio no later
than 1955.

Paste food coloring was not generally available around here in those days,
I'm sure Grandma used McCormick's. I'm sure you could reduce the
amount considerably if you used paste. Whether that would reduce your
chemical intake, I don't know.

I would be quite surprised if a thorough search of "women's magazines"
from about 1945 to 1960 didn't turn this recipe up. However, I definitely
don't have time for it right now.
