Okay, this is the second time someone has used that term in this thread. What is meant by "Dutched" cocoa? I assume this is not meant to be a slur like the "English" or "French" disease. Or does "Dutch" in this case signify something missing or left out. In this case, sugar?
Or, weren't the Dutch the first to solidify chocolate? In which case, does this term "Dutched" cocoa have something to do with that?
