Pinto beans may be very late period as they are of New World origin. 
Black-eyed peas are Old World and were definitely eaten in period.

I can also recommend Brodo of Chickpeas (my workup of the recipe should be 
in the Florilegium).  It works well if your audience is just a little 
adventurous.
