[Sca-cooks] Fabrication?

Fabrication is the meat processing industry term for cutting and shaping
meat.  Carcasses are fabricated to primal cuts, sub-primal cuts, and retail
cuts.

The USDA uses the term in its official publications and it is in the class
descriptions of the CIA and a number of other culinary schools.

I guess its the system's way of saying this ain't your Grannie's butcher
shop, it's a factory.
