We've always kept our knives in a heavy wooden block at the back of the
counter. Fairly unreachable by children until they're old enough to have
some respect for the knives. If you are not comfortable with this rather
open approach, get plastic knife sheaths for each and every blade, and keep
them in a drawer with a child-safe latch.
