That is very good news indeed!! I am glad that you are OK.

As for a low carb dish, would *Barley with Carrots and Nips* be acceptable? Barley is whole grain and carrots and parsnips are good as well. What do you think?

  Okay, had my checkup this morning and I just want to share the good news!  Many of you may or may not know that I was diagnosed as a diabetic 3 months ago. I had gone to spend the night in the hospital because I thought I might be having a heart attack - the left arm went numb while I was driving home from a particularly bad day at work - so I started to panic - I didn't really know what was going on.  Brought on a full-blown panic attack.  Anyway - got diagnosed with really high blood sugars.  Had an A1c of 9.3 at the time.  This morning - my A1c was 5.6! And I have lost 4 more pounds - the hard way (through diet and exercise.)  I'm on the right track.  I have to increase my exercise level again and the weight might come off at a pound a week instead of half-pound, but coming off it is.  

  So, just wanted to share my good news with the world.  I know that I have been looking at the existing medieval recipes and looking for more that are low carb or low-GI index based when I am designing menus and trying to redact new recipes.  And there are a lot more of them out there than I thought at first.  So, that's the good news.  That also means my future feasts will be designed with extra attention paid to the carb-count so that I can eat of it safely, not just cook it for others to eat!

  Anyway - just wanted to share good news with everyone.
