Can somebody please advise me on converting from butter to oil in a
banana bread recipe? My daughter (three and a half weeks old now and
getting HUGE on mama milk. I make good stuff!) may be experiencing the
same colic that her big sister had, and I had to go casien free for
months that time 'round. So I'm going casien free for a week to see if
that alleviates it. Meanwhile, I have four bananas that are at the
perfect state for banana bread. I found plenty of vegan recipes on the
web, but I love the recipe I already use. Just have to figure out how
to change from butter to oil.

If all else fails, I'll try using non-hydrogenated margerine, but I'm
trying to avoid soy as a rule. I'm pretty certain that's what ate my
thyroid during and after my last pregnancy :(

Thank you!
