Thanks Stefan.  Breadmaking is an old passion of mine, though I am not nearly as well researched as many on the list.  I hadn't thought to check the Florilegium as when I was in charge of the bread for the feast, I wasn't fully functional.  I am sure I will enjoy looking through these.
