Yes, I understand, and meant that to be implicit in what I was saying.  
I know when I alter a recipe...and I know why I alter it...and, if it's 
for the SCA, I make sure that those looking at/eating my work know 
this...and that it may no longer taste like what a period cook would 
have created.
