There is some gray area here too. Symptoms of Celiac disease are often digestive reactions, but Celiac disease is definitely an allergy to all forms of gluten. It is officially classified as an autoimmune disorder, as persons with Celiac often react to gluten as if it were a toxin and suffer from diarrhea, weight loss, malnutrition, anemia, irritable bowel syndrome, abdominal pain and gas, constipation and bloating, fatigue, and nutrient deficiencies.
