Lettuce and spinach are period greens, and they make a good salad with 
some sliced cucumber, slivered almonds, etc.  I'd probably combine the 
first and second removes and skip the celery and carrots.  I'm uncertain 
as to whether balsamic vinegar is period at all or period for salad, but 
personally I'd probably go for plain wine or cider vinegar.

I'd probably keep the chickens and lose the potatoes.  Roast spuds are 
blatantly non-period, and there are plenty of other options.  I'd tend 
to go for lozyns or some other easy dish.

I don't have my recipes handy, but try googling beef y-stwed.

Jumbals are no more difficult to make than shortbread and the shaping is 
fun :-)

I think that this looks like a nice, simple menu, and I don't think it 
should be too complex for most teens, assuming that they at least boil 
water at home.
