After reviewing the beans article in the Florilegium

(thank you, Stefan :-) the first thing i'd try in the 14th C. fasoli 
recipes is black-eyed peas.

And i've got a small sack of cream peas i could soak and cook - 
they're related to black-eyed peas, only without the black eyes.

After that i'd see about getting the beans out of yard-long beans - 
or winged beans, if i can find some.

...unless someone has a better suggestion.
