Maybe one year I'll get a deep freeze and be able to keep the bones around from turkeys/ham/etc for soup stock...  Just don't have the freezer space right now and by the end of the turkey, I don't want turkey soup.

I'd be likely to combine it with a clean-out the freezer activity
and go from there. I have a tendency to put ham bones in the
freezer and those go well in soups this time of year, esp. bean soups.
Serve with cornbread.
