I would highly recommend Wusthof Classic as a brand. I used one set for 10
years (which my ex-wife got) and my new set for over 3 years and have been
thrilled with their quality and reliability. I don't have the Santoku
knife, but I'm sure the Wusthof one will have the same quality as the rest
of the line.
