The correct term for someone who eats fish but not red meat is pescetarian.
You may also here pesco-vegetarian, but that's not really correct.  

And while pescetarian's tend to be included in the community of people who
identify as some level of vegetarian, they're not, technically vegetarian.

although the author misses a few, such as the "Living foods" diet or "raw
foods" diet, which are by nature also vegetarian (as they include only
living, raw plant foods) and "pesco/pollo vegetarianism".
