i have always frozen them, esp butter (don't use margerine 
anymore, evil doncha know).  i stock up on those rare 
occasions smith's or abbertson's sells it for 2 bucks a 
pound.  hoard it away for christmas baking.  some was 
frozen for months at a time and i have not noticed any 
problems.
