[Sca-cooks] recipes without honey

Well, I really don't see the problem. There are any number of dishes in the
medieval corpus that don't involve sugar or honey or any other sweetening,
but if she wants to serve a sweet dish with no sweetening, she has a
difficulty- either the dish is sweet and has a sweetener, or it isn't and
doesn't. If it has a sweetener, diabetics should limit their intake. If it
doesn't, there's no problem- it can be included as part of a balanced diet.

If she's determined to serve a sweet dish with no diabetic difficulties,
then she needs to substitute in a diabetic friendly sweet- Splenda, for
example. But I suggest that she look her menu over carefully- if everything
she wants to serve is a sweet dish, then she's not balancing her menu.

What is she pulling her dishes from? If everything she has is a sweet dish,
sounds like she's dealing with the Elizabethans, and there are certainly
plenty of other cuisines, on line, that don't use the vast quantities of
sugar that the Elizabethans used.
