Regarding the safety of various ingredients...

The following link takes you to a database called Everything Added to Food in the United States.
http://www.cfsan.fda.gov/~dms/eafus.html

Search to find the substances you want, then note down the REGNUM number.  Then go to this link:
http://www.access.gpo.gov/cgi-bin/cfrassemble.cgi?title=200421
and look up the REGNUM in the Code of Federal Regulations.

It won't provide you with suggestions for substitutes, but it should give you an idea whether a certain ingredient will kill you or make your nose fall off.
