Off the top of my head, I can think of four different sources for 
sausage recipes... I think we may need to prepare a list of the 
different period sausage recipes out there?

I can think of five different sausages that I've done -- three from Platina, one from Le Menagier, and one from Apicius.  And I know I haven't done them all by any means!  I've only been sausaging for a couple of years, after all ...

When I get a chance, I will look up and post the ones I've used.
