green chili stew, cheese, tortillas, biscochitos...

i have to make a vegetarian green chili stew.  i have 
disliked most i have seen presented at this annual stew, 
so i have decided to go with potato soup with green chili 
and cheese.

how did you make your vegetarian chili?
