I'm not sure if it is arranged, so much as it is what I have observed..
sometimes the toasts start right after serving, sometimes as late as the
middle of the feast- this latter more often when there is no royalty present
and the toasting is "in absentia". I have seen two gentles rise to give the
next toast, and the junior will defer to the senior in rank. It strikes me
as rather free-form and spontaneous, pre-arrangement might be advantageous,
if you can find the senior persons ahead of time, and they are all at the
feast.

PS "Senior" squire is usually a member of the Centurions, as well.

Thank you everyone for your comments on this SCA toasting. I had no 
idea that these were pre-arranged. Much less that there was quite a 
protocol of rank involved. I'm unlikely to ever meet these protocol 
requirements and if I ever overcome my "fear of not knowing what to 
say", I could have really embarrassed myself if I stood to give an 
impromptu toast and found out I was interfering with someone's 
pre-arranged toasting.

others may be forewarned about these traditions.)
