Well yes, but the kind of compost you are thinking of is usually made 
in big batches, and canning is much cheaper than pickling it. Just 
think of all the vinegar that would require. :-)

Although I really like the idea of the new compost bins which have now 
become available. The ones that are made from 55-gallon drums (or 
larger) and are mounted such that they can be rotated, either 
occasionally or continuously. No more back breaking turning the compost 
by hand, which I don't end up doing as much as I should.
