Well, I just mailed a few 17th century ones a week or so ago, but my favorite 
one is modern:

1 cup pureed raspberries
1 cup sugar syrup (50:50)
2 egg whites, beaten stiff
2 tbsp whipping cream

freeze. You can vary ingredient amounts, but the cream should be barely 
perceptible.
