Very OOP, but this is for the folks who can't have dairy. It is more like
ice milk (anybody remember ice milk?) than ice cream, but it's very good.
2 whole eggs
3/4 cup sugar
3 cups Silk brand plain soy creamer
2 teaspoons vanilla extract
Whisk the eggs, whisk in sugar slowly, stir in creamer and vanilla. Freeze.
For strawberry, replace 1 cup of the creamer with 1 cup pureed frozen
strawberries.
For vegan ice cream, leave out the eggs. Yes, it does work.
For dairy ice cream, use 2 cups heavy cream and 1 cup milk, or 3 cups
half-and-half.
Cynara
