The secrete to tamales, Whip the Lard on high adding Masa and broth till its

My Tamales and Sangria class was Thursday, and it went pretty well.  The
class notes definitely included the "Float Test" method, and we did it a
couple of times (one batch didn't float so I added more fat, one of the
students said it was nice to see it not come out perfectly the first time so
she could see how easy it was to fix problems).  This class works by having
a batch of tamales made up in advance from the previous class.  Those go
into the steamer for an hour and a half while the current class makes a new
batch that will be steamed by the next class.  The dessert is chocolate
tamales with Kahlua Bananas.  Pretty tasty, that :)
Thanks for all the advice, it really helped, as did my GM that grew up in
New Mexico and knew several tricks, including using a tortilla press to make
perfect circles everytime.
