[Sca-cooks] question about breads

Corn bread

4 c cornmeal, bulk is usually fresher
1 T baking powder
3 eggs
2 c buttermilk (approx)
1 c cheddar, cut into 1/2" cubes NOT shredded
1 c corn, frozen or fresh
roasted red pepper, chopped  (optional)
fresh or dried chilies to taste
1 tsp gnd cumin
Mix it all together, adding enough milk to make a thick batter. Spray 
a 9x13 in rectangular pan with cooking spray and pour in the batter. 
Bake at 400 for 30-40 min, or until done. The cheese makes little 
pockets of melty goodness.  Making it in a cast iron skillet is good 
too, but cut it in half or use two skillets

(I dont put in salt or oil or sugar,  but you could if you REALLY wanted to)
