But then again, I've seen a black jack 'possum hold off a whole pack of coon hounds when cornered.  I know I wouldn't pick one up unless I had on welder's gloves.  They can bite something fierce.  
My ex and his family used to capture them live, and feed them corn for a week or so before butchering them for the pot.  You parboil them whole, then smother with lard and bake  with onions and sweet potatoes.   I would not recommend it for gourmet fare. 
And besides, the skin looks too much like cat hair for me to appreciate it.
