Interesting, Alys. May I ask you to find the period recipes? The way we
always made it (understanting this is my memory from 40 years ago or so) was
to supersaturate a solution of water and sugar, at heat, then to drop the
string in and let it crystallize while it cooled. I remember we could add
some flavoring and/or color, but not more than a couple drops or it wouldn't
chrystallize right. We were making Medieval rock candy?

Anyway, I'd love to see the recipes you have.
