We did these for a wedding this past weekend. They are wonderful!!!

Hot Cheese Puffs

Amount Measure Ingredient -- Preparation Method

14 7/8 cups sharp cheddar cheese -- shredded
3 3/4 cups butter or margarine -- softened
7 1/2 cups all-purpose flour -- If using self-rising, omit salt
7 1/2 teaspoons freeze-dried chives
3 3/4 teaspoons seasoned salt

Mix cheese and butter; stir in flour, chives and seasoned salt until
blended

Shape into 1-inch balls; place on ungreased baking sheet.

Cover and refrigerate at least 48 hours.

30 minutes before serving, bake at 400 until set and golden brown, 15 - 20
minutes.
