[Sca-cooks] Cuisine Styles

Well, it is actually international cuisine styles, and I considered mexican
but went for spanish instead.  I'd also like to do Indian, but really think
the oriental cuisines deserve at least two classes (could do 10 on Oriental
cuisines - thai, japanese, korean, vietnamese, at least 4 Chinese regions,
etc.).
I am starting out with American Regional, and I will probably lump the
mexican in with that as an overview.
Keep the ideas coming, though, thanks!

This is for the US? You need Mexican food!

Vegetables: tomatoes, chilis, onions
Starches: corn
Seasonings: chili peppers, cumin, cilantro
Meats: beef, pork, chicken, goat
Traditional holiday food: sweet tamales
