Cheddar
Monterey Jack
Mozzarella
Provolone
Swiss (not so much)
"Farmer Cheese" (a soft young solid cheese, rather bland)
Muenster
Parmesan

Any or all mixed together in the layers.
It's funny because I'm no fan of cheddar or swiss but mixed with other
cheeses in an armored or garnished turnips recipe I love them.
