Personally, I'd go with the cabbage and apple dish.  However, the price for asparagus is excellent, at least in our neck of the woods.  I'd probably go for about 4 - 5 stalks per person...I'm not all that great at estimating poundage, so you might want to see how much that weighs.  Also remember that there are a number of folk who won't eat green veggis, so you could probably cut back on the number of people to, say, 100 - 105...
