And moist!!!  Just because it isnt' traditional doesn't mean it
is the wrong way to do it.  I always cook my birds breast down
so that the breast meat is most and flavorful.

In order to analyze what went wrong, I need more information.
What kind of potatoes did you use?  What kind of pot did you
cook them in?  How good or bad does your water taste?  What
were the other ingredients you used in your recipe?  Did
anything untoward happen during the cooking process? [i.e.
did the potatoes burn or stick to the pot?]

Sounds similar to my version of pumpkin cheese cake.  Except 
that I use the nut in place of the crust.

Nut Crust:

Yields 1 9" crust

1 1/2 cups finely chopped nuts
2 tbsp sugar
2 tbsp butter, melted
1 egg

Preheat oven to 400 degrees.  Mix all ingredients thoroughly 
in a bowl.  Press mixture into the bottom of pie pan and up
sides.  Bake for about 6 minutes.  Cool before filling. 
Crust can be re-baked with the filling.
