Here is my recipe for Pumpkin Cheesecake:

2 1/2 lbs cream cheese, softened
1 cup sugar
4 large eggs, lightly beaten
3 egg yolks, lightly beaten
3 tbsp all-purpose flour
2 tsp ground cinnamon
1 tsp ground cloves
1 tsp ground ginger
1 cup heavy cream
1 tbsp rum extract
1 can or 16 oz mashed pumpkin

Preheat oven to 425 degrees.
In large mixing bowl, beat together cream cheese, sugar, 
eggs and yolks. Add flour and spices.  Beat in cream and 
rum extract and then add pumpkin and beat at medium speed 
with an electric mixer until just mixed thoroughly.
Pour into prepared crust and bake for 15 min.  Reduce heat 
to 275 and bake for an additional hour.  Turn off oven, but 
leave the cheesecake in overnight or until cool.  [This helps reduce cracking.]  Serve cool or
chilled.
