Thank you, Adamantius... that helps quite a bit.  I've done variations of 
that stuff before, just didn't know the official name for it <grin>.

I plan to try Alton Brown's brined turkey for our Shire Christmas Revel in 
December... I might just make up some stock then to "help" the gravy a bit.
