The 'Description of Familiar Foods' and al-.Baghdadi are both in Charles 
Perry: Medieval Arab Cookery'. I can't recall page references offhand, 
unfortunately. Interestingly, there is also a dish called 'sumacia' in the 
Liber de Coquina (I use the trsl. by Robert Maier: Liber de Coquina, 
Frankfurt Main 2005).

That is Titley, Nora M.: The Ni'matnama Manuscript of the Sultans of Mandu, 
London/New York 2005. But I think the only sumach recipe in there is for a 
drink.
