[Sca-cooks] cornbread and bacon stuffing

it comes out of the Better Homes and Gardens Cookbook.
(the red and white checked one w/ blue writing--I know
they update this periodically-mine was copy righted
1989)

Corn Bread and Bacon Stuffing

4 slices bacon, chopped   (I use about twice that)
1 cup chopped celery
1 cup chopped onion
2 beaten eggs
2 tbsp snipped parsley
1 tsp poultry seasoning
1/4 tsp pepper
3 cups coarsely crumbled corn bread  (any cornbread
recipe works, I have tried several)
3 cups dry bread cubes
1/2 to 3/4 cup chicken broth

In a skillet cook chopped bacon until crisp over
medium heat.  Remove bacon, reserve.   Cook celery and
onion in bacon drippings until tender. (Keep all
drippings, this is added to the stuffing) (The
original recipe says to cook the bacon, celery and
onion all at the same time, I had a hard time getting
the veggies to be tender while still not over cooking
the bacon, so I separate the steps.)

Meanwhile, in a bowl combine eggs, parsley, poultry
seasoning, and pepper.  Add corn bread and bread
cubes; toss lightly till mixed.  Add bacon, cooked
celery, onion and drippings.  Drizzle with enough of
the broth to moisten, tossing lightly till mixed. 
Makes 8 to 10 servings or enough to stuff a 8 to 10 lb
turkey or domestic goose.

another note of mine- I have added a cup of raisins
(soaked in chicken broth to plumb) to this recipe and
it comes out yummy.  For those that like the fruit in
it.
