[Sca-cooks] Rum festion??

In "Lobscouse & Spotted Dog" has a recipe for "Flip" This recipe book is
just oodles of fun!
(because you flip it back and forth between two pitchers to give it the
frothy consistency)

Found many recipes for Flip on the internet through Google.

"Lobscouse & Spotted Dog"

1 egg
1 pint dry sherry
1/2 Teaspoon Ground Nutmeg
2 Teaspoons Sugar
1 Teaspoon butter

Have ready two large (about 1 quart) earthenware jugs or measuring cups.  In
one jug, beat the egg with 1 Tablespoon of the sherry.  Heat the remaining
sherry in a saucepan with the nutmeg, sugar, and butter, until the mixture
is nearly boiling.  Gradually add the hot sherry mixture to the egg mixture,
stirring rapidly to keep it from curdling.  "Flip" the mixture by pouring it
rapidly back and forth between the two jugs until it is creamy and well
frothed.

Serves two

Variation:  For a more plebian but equally authentic Flip, substitute a good
brown ale for the sherry.  William Kitchiner, among others, calls this "A
Yard of Flannel".
