[Sca-cooks] white balsamic vinegar?

Hey all from Anne-Marie

I love white balsamic for the subtle balsamic like flavor (but not as
sweet and syrupy). I had thought that it was made the same way as
regular balsamic but they started with white wine instead of red?

As for how period it is, I'm not sure. I would presume at least as
period as regular balsamic?

On a side note...we know that Chiquart mentions both red and white wine
vinegars, but do we have specific references to other kinds? Who? When?
