The steak smothered in onions in my Grandmother's household was a cheap cut,
pounded to within an inch of it's life, dredged in flour with salt and lots
of pepper, fried in lard or Crisco, then the onions were added to the pan
and cooked with the steak, making a brown gravy. I haven't ever made it,
and haven't had it in at least 40 years, but it sure was good. My mama used
to add a little coffee to the gravy to make it dark.
