Most of these smokers are electric.

I have a traditional smoker that I don't know how to use. It belonged
to my
mother who is now in a nursing home. I don't think she quite has the
capacity to tell me how to use it. It's a shame for it to sit and rust
away. Does anyone know how to use it to smoke meat? It is shaped like a
cylinder with a dome roof, a door in the side, and two enamel bowls that
fit inside it somehow. >>>

I also inherited from my mother a smoker that she had that had never
gotten put together after my Dad died, so I'd be interested in more
smoker details myself. However, I got the smoker from Mom after some
discussions on this list about smoking meats, so there was some info
discussed then. Now I just need to get out and use it. :-)

Aislinn, you might want to take a look at this file in the FOOD-MEATS
section of the Florilegium:
meat-smoked-msg (48K) 4/20/05 Medieval smoked meats. Smoking
meats.

If you are thinking about making/smoking sausages, these files might
also be of interest:
sausages-msg (176K) 4/17/05 Period sausages. Making sausage.
sausage-makng-msg (36K) 4/20/05 Sausage making techniques. Supplies.
