Aislinn's description reminded me of the smoker/grill I used to have,
now residing at Brekke's place. There are a number of similar models
made by different companies, but mine was a Brinkmann. If you go to
the Brinkmann website and look here:

You'll find downloadable instruction manuals for a variety of
smokers, such as the Smoke And Grill charcoal model, which is what I
had, and sounds rather like what you're describing, or maybe there's
something else there that comes closer.
Obviously some of the material will be very model-specific, but some
won't.
