        On absolutely no documentary evidence, I'd bet that the apple juice 
was fermented. Apple juice ferments very very easily - just leave that bottle 
of opened and recapped cider on your porch and watch it... You would have to 
really concentrate the syrup before it was too high in sugar to turn, and maybe 
all you'd get would be a smaller quantity of higher alcohol...
