        Tripe is the stomach of the beef (forget which one). Its texture is 
in fact very weird and chewy.
          What about cold liver? As in, chopped liver, or liver pate, or 
liver mousse? These are all served cold. (I dunno about the other ones, though... 
cold kidneys? neh... But deviled kidneys on toast, yum. Also 
steak-mushroom-kidney pie...)
