Yes - I seem to remember something in WILD FERMENTATION about making 
"milk ferments" like kefir with non-dairy, nut/seed-based milks.  

Don't forget, you can make almond milk thick, to the point of almond 
cheese even, within the existing Medieval corpus.  The Flori-Thingie has
