There are other "usual suspects" of standard guacamole ingredients to which
you are not allergic.  Chopped tomatoes, onions and garlic.  Lemon or lime
juice, particularly over the surface to prevent browning.  Salt and pepper.
LOTS of pepper.  Maybe Long Pepper, which really does give a bit of "bite"
without eeevil capsicums.

I'd probably go for sour cream instead of mayo though, particularly if it
were to sit out for a while.

By the way, if you get to an event where Griffin Dyeworks is peddling, do
take them up on it when they try to push avocados off on you.  They start
out rock hard but if you wait a week, they are PERFECT for making dip and
taste exceptionally creamy and good.
