2) I want to "one-up" my supervisor. We plan parties/special lunches
around the various holidays.  I work with adulis with {profound & severe}
developmental disabilities. Most have either problems with chewing &
swallowing or have no teeth. With summer here, her idea of the "good menu"
is sloppy joes, tater tots, baked beans, chips and maybe a cookie. I'm
thinking to suggest pulled pork sandwiches, coleslaw {cut finely, like KFC}
jello salad and "sorbets" {fruit slushies}. Usually the budget is ~$75.00
to feed 30 - 35 people.

I need to tap the brains of the greater collective here!
Thanks!

Any of a number of ground meat pasties comes directly to mind, like pies of
parys. It's basically ground meat in crust. Sloppy joes is saucy ground
meat in a bun. Same same.

Tater tots can become croqueti using seasoned mashed potatoes and breading.
More work, but better tasting and more interesting.

Baked beans can become a baked pea dish from Scully's neaploitan cusine
(onions and
cinnamon)http://franiccolo.home.mindspring.com/fasoli_napolitana.htm.

Let 'em have the cookie if shrewsbury cakes aren't adequate.

It's a mix of modern and period that could be a fun meal. Now that I've
looked at it, I'm starting to ponder a grilled meat (pork/lamb/suasage) with
this menu for a summer cookout next weekend.
