That's a good method. I think my favorite pineapple presentation,  
albeit gratuitously 80's nouvelle, was paper-thin slices macerated in  
just a little brown sugar and a tiny pinch of salt, and served at  
room temperature with a sweetened, light-rum-spiked Hollandaise variant.
