Which file has the technique?

Which reminds me- do you happen to have a file, or something that could 
direct me to the techniques for deboning critters, primarily poultry, so that 
instead of a flat piece of meat and skin, you have a sack, suitable for 
stuffing? I know there's a method, but I don't know the method. It seems I
