When my mom needed broth or stock and couldn't wait a whole day (say, 
she was using it for a meal in a couple hours), she'd let it cool a 
bit, but it was still warm. Then she would wrap an ice cube or two in 
a paper towel and drag it over the top of the stock. The cold of the 
ice would harden the fat and it would stick to the paper towel. She'd 
have to replace the towel every so often. Worked pretty well.
